Ask a Chef with Michael Smith: What's Inside his Vanilla Bottle?

Today we bring you the first installment of our Ask a Chef series with one of our most beloved chefs, Michael Smith, host of Chef at Home and Chef at Abroad. I caught with him recently when he was here promoting his new cookbook: The Best of Chef at Home. (Be sure to check out Elana's review).

After our chat which included how he and Gordon Ramsay apprenticed under the legendary Roux brothers in London to how he opened a can of “maple whoop-ass” during his recent Iron Chef America competition, which will air sometime in the new year, I managed to squeeze in a few questions from you, my dear readers.

Many of you wanted to know: What exactly is in the vanilla bottle we often see him using in Chef at Home? Watch the video below and find out.

I really appreciate Michael's down to earth answer about vanilla. But I have read recently some information on fair trade vanilla (much like fair trade coffee and chocolate I believe) and wonder if Michael would have any thoughts on the production of vanilla?
