Ingredients:

Spaghetti Alla Caprese

  • 1 lb. spaghetti (450g)
  • 2 x tomatoes, diced
  • 1 x large mozzarella ball, cubed
  • 1/2 cup extra virgin olive oil (120ml)
  • 1 tsp oregano (5ml)
  • salt to season
  • 4 x basil leaves
 
Directions:

Spaghetti Alla Caprese

  1. Cook spaghetti in salted boiling water for 8 minutes or until al dente. While your spaghetti is cooking, begin to make the sauce. Mix tomatoes and mozzarella in a large bowl. Add the best available extra virgin olive oil, oregano, salt and basil leaves.
  2. When the spaghetti is ready, add it to the bowl with approximately 1/2 cup of pasta water. Mix well and serve immediately.
