Caramelized Onion and Fig Tart

  • 3 tbsp butter (45 ml)
  • 3 large onions, sliced (8 cups sliced) (2 L)
  • 1 sheet phyllo pastry, rolled into 1/4 inch thickness
  • 10 sprigs fresh thyme, soft feathery ones
  • 6 fresh figs, quartered lengthwise
  • 5 oz Cambozola cheese, crumbled
  • Coarse salt and freshly cracked black pepper
 
Directions:

Caramelized Onion and Fig Tart

  1. Preheat oven to 450 degrees F.
  2. Heat butter in a large shallow pan over low heat. Add onions, salt and pepper. Cook until the onions release all of their liquid and have turned a deep golden brown colour, stirring occasionally to stop onions from sticking. Cook until onions are soft and take on a caramel colour and liquid has reduced completely. Set aside to cool.
  3. Put pastry on a baking sheet and then put in the fridge to chill.
  4. Arrange caramelized onions over entire surface of the puff pastry. Arrange thyme sprigs in a decorative criss-cross pattern over top of onions. Put the figs in the squares between the thyme sprigs and then sprinkle crumbled cambazola.
  5. Bake for 20 minutes or until crisp. Cool slightly before cutting. Cut into squares or diamond shaped pieces.
