Caesar's Salad

Ingredients:

Croutons

  • 1/4 cup butter
  • 3 cups baguette bread, cut into 2 cm cubes

Mayonnaise

  • 1 x clove garlic, finely chopped
  • 1/2 tsp anchovy paste
  • 1 x egg yolk
  • 2 tbsp lemon juice
  • 1/2 cup olive oil
  • 2 tbsp capers, chopped
  • salt and pepper

Salad

  • 1 x large large romaine lettuce, shredded
  • 10 x slices 10 slices of bacon, chopped
  • 1/2 cup parmigiano reggiano cheese, grated
  • pepper
 
Directions:

Croutons

  1. Melt the butter in a frying pan. Add the bread and slowly brown for about 10 minutes. Set aside.
  2. Using the same frying pan, cook the bacon until crispy. Drain and set aside.

Mayonnaise

  1. In a bowl, using a whisk, combine the garlic, anchovy paste, egg yolk and lemon juice. While continuously whisking, drizzle the oil in a fine stream until the mixture thickens. Add the capers. Season with salt and pepper.
  2. In a salad bowl, dress the lettuce with the mayonnaise . Add the croutons, bacon and parmesan cheese. Adjust the seasoning.
  3. *Note: For the mayonnaise, I sometimes use a mixture of half olive oil and half vegetable oil.
