Ingredients:
Croutons
1/4 cup butter
3 cups baguette bread, cut into 2 cm cubes
Mayonnaise
1 x clove garlic, finely chopped
1/2 tsp anchovy paste
1 x egg yolk
2 tbsp lemon juice
1/2 cup olive oil
2 tbsp capers, chopped
salt and pepper
Salad
1 x large large romaine lettuce, shredded
10 x slices 10 slices of bacon, chopped
1/2 cup parmigiano reggiano cheese, grated
pepper
Directions:
Croutons
Melt the butter in a frying pan. Add the bread and slowly brown for about 10 minutes. Set aside.
Using the same frying pan, cook the bacon until crispy. Drain and set aside.
Mayonnaise
In a bowl, using a whisk, combine the garlic, anchovy paste, egg yolk and lemon juice. While continuously whisking, drizzle the oil in a fine stream until the mixture thickens. Add the capers. Season with salt and pepper.
In a salad bowl, dress the lettuce with the mayonnaise . Add the croutons, bacon and parmesan cheese. Adjust the seasoning.
*Note: For the mayonnaise, I sometimes use a mixture of half olive oil and half vegetable oil.
